Blue pea flower
The butterfly pea, also known as blue pea, is widely used across Asia for cooking purposes, as well as for making tea. This flower, which by nature has a wooden-like flower, is well known for it’s bright blue color. For this reason it is often used for dying food (for example rice and cakes) and drinks (tea and cocktails). The blue pea flower by nature doesn’t contain caffeine and is considered in Asia as a herb with positive health benefits. As an example the butterfly pea is used to prevent hair from greying, to increase blood flow and as a relaxing agent.
The butterfly pea flowers in our tea are all handpicked and sun dried.
Lemongrass
Lemongrass could very well be the signature ingredient of the Thai kitchen. With it’s fresh flavor it is a great herb to combine with other ingredients. Lemongrass is high in anti-oxidants. Our lemongrass comes from small-scale Thai farmers who plant the lemongrass on the borders of their rice fields to have a bit more yield from their land and to earn a bit of extra income. The lemongrass in our tea is sun-dried and cut or ground not too small, so that all the beautiful oils in the leaf stay intact. This way we can enjoy them in our tea.
Ginger
Ginger is widely known in the world of tea. We use ginger in our Mellow Yellow, Fresh Blue and Soft Sour Flower- teas. Ginger is available as young ginger or as a more mature ginger, which means that it has been harvested after a longer period of time (around 11 months) en therefore has a more robust flavor. In our Tamnan tea we use the more mature ginger.
Pandan leaves
Pandan, Bai Toey in Thai language, originates from the screw palm familie and is used widely in Thai cuisine. The scent and taste are somewhat hard to describe but approaches light-nutty, almost vanilla-like flavors. In Thai cooking pandan is used to give rice a pleasant soft flavor and to soften cakes and desert. And we use it in our tea! You will find pandan in our Mellow Yellow and our Calm Green-tea.
Hibiscus
Hibiscus is a so-called flower plant and is widely used in Thailand as a herbal ingredient for tea. It is also known as a great source of anti-oxidants. For our tea we use the Roselle Hibiscus, of which the flower leaves had been sundried. By use of the right tea blend we give our Soft Sour Flower tea a light sour flavor. This way this tea does not necessarily need any additional sweetener like sugar or honey. Hibiscus is well known for having a calming effect on the blood vessels, increases blood flow and works as a diuretic.
Kaffir lime
Kaffir lime is a citrus fruit and a wellknown ingredient in Thai cuisine. It is known for its fresh and light bitter flavor. For our Calm Green tea we use the kaffir lime to get a light bitter taste, which makes it a tea with a certain character. Surprisingly we noticed relaxation effects from the tea, hence the name Calm Green.
